Hidden in the town of Delhi’s historic Main Street, you’ll find Hollow. The Catskills newest addition to the contemporary bar and culinary scene that’s been sweeping throughout the region.
Step inside Hollow and you’ll feel transported from a quiet hamlet surrounded by dairy farms into a chic modern speakeasy straight from the block of a hip Brooklyn neighborhood. No easy feat, accomplished by proud owners Jake Adams and Eden Rehmet’s. The couple started as weekenders from the city, watching the town develop for over three years before deciding to put down roots for good in Delaware County.
Hollow combines cocktails and tapas in glorious harmony, with a menu featuring regional delicacies highlighting the best foods the Catskills has to offer with an alluring selection of local beers and ciders on draft.

Our top recommendations include the absolute must-have (and already legendary) skillet cornbread, which gets more soul-satisfying with every bite. The duck fat potatoes with chicken salt are absolutely addictive, and the baked sweet potato is topped with an incredibly robust pickled ginger-miso dressing (one of the many vegan and gluten-free options on tap). For cocktails, Eden prepared us a perfectly smooth and balanced Cosmo we couldn’t get enough of.
Committed to an eco-friendly establishment, Jake and Eden also kept their carbon footprint in mind. The bar itself was designed around the kitchen, simple, clean, and lending itself to efficiency in an inviting atmosphere awash in natural lighting. Most of the equipment is second hand, or built by the couple themselves, giving Hollow a unique background that sets it apart from other bars.
